Fig Ice-Cream

Ingredients

1. 100 gms (15 nos.) dried figs (anjeer)

2. 3 1/2 cups milk

3. 1 cup condensed milk

4. 1/4 cup milk powder
Method

1. Cook the figs with 1½ cups of milk. Simmer till the figs are soft and the milk has nearly evaporated.

Cool completely.

2. Purée the fig mixture in a blender.

3. Combine the fig purée, the remaining milk, the condensed milk and milk powder and whisk well so

that no lumps remain.

4. Mix well and pour into a shallow container. Cover and freeze till it is almost set.

5. Divide the mixture into 2 batches and churn each batch separately in a blender till it is smooth

and creamy.

6. Transfer both batches into a shallow container. Cover and freeze till firm.

7. Scoop and serve.
