Kashmiri chilli powder is deep red in colour and it is a little milder than the usual chilli powders.
‘Kashmiri chili powder or ‘kashmiri chillies’ is a bit of a misnomer. It gives curries a nice,
red colour, just like paprika powder.The mild red ones are grown in Karnataka and a few other states,
and are called Byadgi chillies. It is used more for colouring than for heat, although it’s slightly
hotter than paprika.Kashmiri chili powder can top out around 2000 SHU (Scoville Heat Units).The
main quality of Kashmiri chili powder is it’s ability to impart a vibrant red colour to dishes.
True Kashmiri chillies are quite broad, not very red and of medium pungency. Kashmiri chili powder
is both hotter and redder. A more suitable substitute would a mixture of paprika and cayenne
pepper – about 3 parts paprika to 1 part cayenne.The Indian food is incomplete without the kashmiri chilli.
