Fig is a soft, sweet fruit. Its skin is very thin and has many small seeds inside of it.
Figs are commonly called as “Anjeer” in India.figs can be enjoyed fresh or dried, we most commonly
see them dried in salads, dips, soups, stews and baking.Dried figs are excellent sources minerals
like calcium, copper, potassium, manganese, iron, selenium and zinc.Delicious, sweet fig fruit is
one of the prime fruits enjoyed since antiquity in the human history.Kashmiri Figs are majorly green
and purple with an excellent taste and health value. Drying out gives figs the elegant copper-brown
color which is in it, an attraction for the eyes.
Two simple methods how to dry figs
Sun Drying Figs
1. Wash fully ripe figs
2. Cut the figs in half.
3. Lay them on a wire rack
4. Cover the figs with cheesecloth
5. Place the rack in full sunlight
6. Let them dry for 2 to 3 days
Each evening, take them inside – unless the temperature where you live does not drop more than 20
degrees at night. In the mornings, turn the figs over, so they dry evenly on all sides. The figs
are ready when when the outside feels leathery and no juice can be seen on the inside when squeezed.
Oven Drying Figs
1. Preheat your oven to 140 degrees F (60 degrees C)
2. Wash your figs thoroughly with water
3. Cut the figs in half
4. Lay them cut side up on a rack
5. Place them in the oven
6. Allow the figs to stay in the oven for up 8 to 24 hours
Store your dried figs in air-tight containers or freezer bags and keep them in the refrigerator or
the freezer. Dried figs will keep for approximately 18 to 24 months when properly stored.
